Crispy Smashed Sunchokes with Garlicky Herb Sauce

🥔✨ Meet sunchokes—like potatoes but better. They crisp up beautifully, pack gut-friendly prebiotics, and get smothered in a bold garlicky-herb sauce. Oh, and there’s a creamy Greek yogurt base for that extra protein boost. You’re welcome.

🔥 Calories: ~250 per serving

🛒 What You Need:

🔹 1 lb sunchokes, scrubbed clean
🔹 Salted water (for boiling)
🔹 2 tbsp olive oil
🔹 ½ tsp salt (for max flavor)
🔹 ½ cup Greek yogurt (high-protein magic)
🔹 1 tsp sriracha (optional, but 🔥)

🌿 For the Sauce:

🔸 ¼ cup parsley, chopped
🔸 2 tbsp olive oil
🔸 1 tsp honey
🔸 1 tsp Dijon mustard
🔸 1 tbsp capers, chopped
🔸 Juice of ½ lemon
🔸 2 garlic cloves, minced
🔸 Salt & pepper, to taste

👩‍🍳 How to Make It:

1️⃣ Boil & Smash – Cook sunchokes in salted boiling water until fork-tender (~12 min). Drain, then smash them flat. Destruction is part of the fun.
2️⃣ Salt & Crisp – Sprinkle with salt. Heat olive oil in a skillet and crisp them up until golden brown.
3️⃣ Sauce It Up – Mix parsley, olive oil, honey, Dijon, capers, lemon juice & garlic. Add salt & pepper to taste. Think garlicky, tangy, and herby.
4️⃣ Serve Like a Pro – Spread Greek yogurt on a plate, pile on the crispy sunchokes, drizzle with that bold sauce, and hit it with some sriracha if you like heat.
