FYI, this is closer to a Double Stacked Taco than a CGC. While the Double Stacked Taco utilizes a conventional tortilla like you did, the CGC uses a nice pillowy comforting flatbread, and uses a SPICY RANCH SAUCE. Not some CrEmA. Don’t mess with my ‘Dita, man.

Also crema de Oaxaca Is the best type of sour cream anywhere or Guatemalan sour cream that shit's fucking even better if you can find it. It's kind of hard to find. My favorite brand has a quetzal on it and it comes in a bag. But I can't remember what it's called for the life of me, but I highly recommend it

Whats in the marinade? Onion, some kind of dried pepper (ancho or guajillo?), lime juice, cilantro, tomato, salt, pepper, spices (cumin and chili powder and something else thats the same color as cumin.. coriander powder?) a cinnamon stick, olive oil, some other spices, maybe oregano? And coke. Is there any garlic? Im sure one of those spices was cayenne too. Someone check me
