I love your recipes Chef John but I am sorry to say you omitted one key ingredient in the perfect chicken soup recipe. I never had homemade chicken soup, it was always Campbells when I was a kid. The very first dish my future wife to be made for me was chicken soup. I came over to her apartment and she presented me with a bowl of chicken soup. Two things about that soup I will never forget are that it had a whole chicken thigh submerged just beneath the liquid and when I tasted the broth I was delighted but perplexed. She had made it with ginger and and that made all the difference in the world. We have been married seventeen years and when I am sick she makes it for me and I always feel better after having a bowl of it.

Thank you, so glad I found this recipe. I make this just about every week, but add in mushrooms, small tin of sweetcorn and tiny bit of MSG. It's good!!

my mother wasn't a great cook, but she had a couple dishes that she could be proud of, and one is chicken noodle soup. she would make homemade noodles, not with a pasta machine or anything, but rolling them out on the counter and cutting them with a pizza cutter. this is what made the dish

Chef John, I've been making chicken soup after this recipe for years now, testing it on various sick roommates, friends, family members etc. - and one particular cold-ridden roommate just called it "the greatest soup of all time". Gotta hand it to you, this simply IS the best chicken soup ever, it never fails to comfort when sick or in a bad mood.

My grandmother always made chicken noodle soup from scratch and gave it to us when we were sick. She called it "Jewish Penicillin" (why "Jewish" I don't know, but it never failed to help us get over whatever we were ailing from and it was comforting. Like a warm hug in a bowl. LOL. Thanks for the many trusted recipes I have swiped through the years from you Chef John.

Being an old man, I remember when I was much younger my mother also made Mashed Potatoes and we put the soup over the potatoes. making a very hearty meal. Of course you need to put butter on the potatoes. Chicken soup left over was for lunch the next day. Another tip, make some Rhodes dinner rolls to go with the soup. Use cup cake pan and cut the dinner rolls into 3 pieces to have nice clover rolls.

this is such an easy recipe. i just increased the portions of veges, added fresh garlic, used olive oil instead of butter and chicken breasts that i oven-baked and chopped up. using egg noodles much smaller than the noodles chef john used. came out great! thank you.

Attn: People worrying about "wasting" the dark meat. We're not wasting anything. The reason the broth is so awesome is because we extracted all the flavor from that meat. It will not be nearly as good if you also save the dark meat for the soup. Once the broth is done, that meat is completely flavorless, which is why we don't save/use it.
