The New York hush money trial judge knows that the sentencing will be delayed by an appeal following trump losing his immunity hearing so postponing the sentencing from the judge's side is responding to the delay caused by the immediate appeal following the loss of immunity so no big deal since there was going to be a delay anyway.

The judge should have just imposed a deferred sentence and been done with it. If the defendant completes probation and pays all fines, the judge will dismiss the case and the sentence will be thrown out
