Posole is one of my favorite Mexican soups. Traditionally it is made with the same red chile sauce that is used in Red Enchiladas, also with Beef, Pork or Chicken and Hominy- nothing more! I am surprised the broth at that restaurant was so thick, normally it is lighter and more diluted.
I have seen the Vegan version made with Jackfruit. I am surprised you didn't care for it because Posole easily transfers to a Vegan soup (when done right).

Before you go places to try something you should really ask how to prepare it so you have a better way to deliver the message when you’re eating it also if you go to Mexico to only have tacos you’re very close minded
