INGREDIENTS:

- tsp = Teaspoon
- tbsp = Tablespoon

Dough:
- 300 g all-purpose flour, little less than 3 cups, plus more for dusting
- 125ml water, 1/2 cup
- 1 egg
- 3 pinches salt

Meat Filling, you can fill with whatever you like, beaf, chicken, mushroom, chickpeas, cheese or veggies:
- 250 g double-ground minced meat
- 1 onion, grated
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp red chili powder
- 1/4 tsp parsley

Garlic Yoghurt Sauce:
- 1/2 cup strained yoghurt
- 4-5 cloves of garlic
- 1 pinch of salt
- 1/4 tsp of black pepper

Butter Sauce:
- 1 tbsp butter
- 2 tsp red pepper flakes
- Dry mint, for topping

• Let's begin by making the dough.
• In a large bowl, combine the flour, salt, water, and egg using a wooden spoon.
• Once mixed, transfer the dough onto a clean surface for kneading.
• Knead by hand for 8-10 minutes until you achieve a soft dough. If it's too sticky, you can add an extra half cup of flour. Alternatively, you can use a stand mixer for kneading.
• Divide the dough into 2 portions, cover with a damp cloth, and set aside.
• For the meat filling, mix minced meat, black pepper, salt, cayenne pepper, and grated onion until well combined. Set aside.
• Lightly flour the counter and rolling pin before rolling out the rested dough to prevent sticking.
• Roll out one portion of dough into an elliptical shape, about 50 cm in diameter and 1.5 - 2 mm thick.
• Cut the dough into small squares, approximately 3cm each, using a knife or pizza cutter.
• Place a small amount of minced meat filling in the center of each square.
• Moisten your fingers and stick opposite ends of the dough together, then fold all four edges of the dough on top of the meat to enclose it.
• Repeat for all the dough squares.
• Bring a large saucepan of water to a boil, adding a pinch of salt and 2 large cloves of garlic.
• Carefully add the momos to the boiling water and cook for about 3-3.5 minutes until they're cooked through.
• After turning off the heat, add a glass of cold water to prevent overcooking.
• Whisk the yogurt by adding crushed garlic, salt, and black pepper to taste.
• For the butter sauce, melt butter in a small saucepan until it sizzles, then remove from direct heat and shake to create a foamy texture.
• Add red pepper flakes, shaking to infuse the butter without burning the pepper.
• Using a skimmer, remove the momos from the water and transfer them to a serving plate.
• Spoon the garlic yogurt sauce followed by the butter sauce over the momos.
• Finish by sprinkling dried mint before serving. Enjoy your meal!
