Butter is wonderful but growing up my Mom swore by margarine. Blue Bonnet, Imperial, Fleischman's, what we had in the house! I didn't use butter until years later! I think her family used it during the Depression -- it was cheaper, apparently! I agree with Gemma -+ as Julia Child said "Buttah is bettah!" :)

Best way I've heard margarine being described is: the fat is about as flexible and digestible as a plastic coffee cup. And it shows. Both in fridge? Butter is hard, margarine isn't. Both at room temperature? Butter is soft, margarine is still the same. Temperature of around 35°C or like 90°F? Butter is liquid, margarine is still solid. And when it finally does melt it does so poorly and it looks weird

Butter only. My mom is from Wisconsin and in her day it was illegal to sell margarine. Wisconsin is the dairy state.They had their own cows anyway.

Butter is expensive and I can't find it in where I live which is a remote village. But there is an alternative and the results are always delicious. It's a mixture of butter and margarin. That's what I use for most of my cookings and bakings 😁

Yes, most of the time butter is better, but not always. I have a Tefal Multicooker - a fancy slow cooker - and it comes with a recipe for sponge cake. The recipe is quite clear that you must use margarine, not butter. I've made the recipe many times and the sponge comes out moist, tender, light and delicious. One day I wanted to bake a cake in there and had to use butter as I was out of margarine. The result was a leaden, greasy cake. Just awful. Lesson learned.

Margarine is awful. Unhealthy. Tasteless. People started to use it back when I was growing up because was cheap and they thought saturated fats were bad so butter got demonized unfairly. Once I moved out of my parents home, many many decades ago, I started to use real butter and never again ate margarine. I am healthier for it and so much enjoy my food more. I go out of my way to find the best butter. Kerrygold is great. Costco started carrying a butter from New Zealand, grass fed, that compares. Very reasonably priced.

Butter also contains a bit of water where margarine is all fat. Can make a difference too!

Butter is natural, while margarine is synthetic. If you are going to use margarine, at least make sure to use non-hydrogenated.

if you use Ghee you will never use either one again, not to mention it is healthier
