Good clear instructions as usual.Thumbs up!
I think I understand the method of turning the dials to 0 but not sure why.
The increments on the dials of the roller I use go from 0 - 14<. 15 is (back to) zero. 15 is also 1.5 mm so it's all done in tenths of mm.
I just take a mental note of the measurement from the start.
From the video I'd say John was reducing the roller by about 2 digits, ie. 0.2 mm assuming it's a roller calibrated to 1.5 mm.

I am new at this. I started watching videos about 7 months ago on how to make jewelry. And I have watched a ton of videos that are on YouTube.
