That first video isn’t just a guy in a blindfold—he’s been completely blind since he was 6 years old. Street Fighter 6 has a ton of accessibility features including audio cues so a completely blind player like him can still know where the characters are and what kind of attacks they’re using. It’s really cool for a developer to put that into consideration when creating their games. (And if I remember correctly, the player, BlindWarriorSven, even got to test SF6 and provide feedback on those features.)
