Banana Split Brownies

These have a cherry flavoured fudgy brownie layer with a creamy top layer and tastes of banana, strawberry and peanut. They have all the delicious flavours of a banana split.

Brownie layer:
8 ounces unsweetened chocolate
3/4 cup salted butter
3 large eggs
2 cups white granulated sugar
1 teaspoon vanilla extract
1 cup plus 2 tablespoons all-purpose flour
1 cup maraschino cherries, chopped
Topping layer:
1 package (8 ounces) cream cheese, softened to room temperature
1/2 cup mashed ripe banana (about 1 medium)
1/3 cup strawberry jam, the chunkier the better.
1 large egg,
1/4 - 1/2 cup chopped (or unchopped) salted or unsalted peanuts
Sliced bananas and additional chopped maraschino cherries for garnish if desired.
Melt the butter and chocolate together, either in the microwave or on the stovetop. Set aside.
Cream together the white sugar and the 3 eggs for 3-4 minutes until light yellow and the volume increased.
Blend in 1 tsp vanilla extract and the melted chocolate/butter mixture.
Blend in the flour until just combined.
Fold in chopped cherries.
Pour brownie batter into a 9x13" greased baking dish. Set aside.
Beat cream cheese until smooth.
Beat in the mashed banana and the strawberry jam.
Beat in the egg.
Pour this mixture on top of the unbaked brownie batter.
Sprinkle peanuts on top.
Bake at 350 for 45-60 minutes until a toothpick inserted in the center comes out with just a few moist crumbs.
Allow to cool completely before cutting into squares.
Serve with a dollop of whipped cream and some sliced bananas and cherries if desired.
Store covered in the refrigerator.
