🗝️ Curry Chicken Salad with Yogurt
2 – 3 chicken breasts, cooked
3 carrots, shredded
1 apple, shredded
2 stalks celery, chopped
Handful red grapes, sliced
¼ cup dried cranberries
1 cup Greek yogurt
1 tsp curry powder
Juice from ½ lemon
1 Tbsp honey
Handful chopped herbs
Salt and pepper

Shred the chicken. Place in a large bowl along with carrots, apple, celery, grapes and dried cranberries. In a separate bowl, combine the yogurt, curry powder, lemon juice, honey, herbs, salt and pepper. Mix until combined. Pour the sauce on top of the chicken salad and stir until fully combined. Enjoy!

I too lost my father in '17. I lost my precious step-dad in 1990. God is everywhere if we will notice and I do believe our loved ones send signs through God that they are with us. : ) When I heard what happened with the butterfly, I immediately, quietly said to myself as I sewed in my design studio..."That is your dad." When my dad died, it was tragic, he died due to horrible undue influence being manipulated, he died far away from me. Several days before he passed, a beautiful red cardinal stood before my husband and I waving his litlte arm-like wings frantically before me as if trying to get my attention. After my father passed, I saw a sermon on my blog list that literally moved back and forth in front of my eyes, it said, "Please do not hold against me what I had done." It was a message from my dad and I never saw that message again even though I looked for it. The morning after our second born's wedding I heard a loud warbling sound. I go to our bedroom window from my makeup area and there were two beautiful birds, one a bright red cardinal and one a bright yellow bird both singing their little hearts out facing me through the window in a lilac tree. I knew it must be my dad and his mother who I was named after. My stepdad who I dearly loved has also sent message through God. There was a double rainbow after the funeral. He sends beautiful roses, one was on the tip top of a rose bush, an almost barren rose bush and even my mother asked, "Do you think that is from Al?" That rose stayed for over a month all the way through my birthday that December and January. Al, my step dad also sent a comic in the newspaper when it snowed here one year after he passed. (It hardly ever snows here). It showed two angels up in a cloud in Heaven. One angel said to the other angel who looked like Al, even his silver hair, his name was Al too! "Hey Al, your grandkids are sure going to have fun with that snow!" Oh yes, God is everywhere and our old pastor told me that yes, they can be with us, The Bible talks about a great cloud of witnesses. Oh Jennifer, I've seen so many things like this, so many signs from God. : ) I'm sorry this is so long, but you mentioned that you would like for us to share.

I’m reminded of a poem that was shared with me when my children were small, and I kept it framed and near my kitchen sink for the longest time: “Thank God for dirty dishes, they have a tale to tell. While others may go hungry, we’re eating very well. With home, health, and happiness, I shouldn’t want to fuss. By the stack of evidence, God’s been very good to us.” ❤ Another wise woman has said, don’t wash the dishes because they’re dirty or because someone told you to; wash the dishes because you love the person who will use them next. (And now I’m wondering if this channel was where I heard that!)

To answer your question, I find beauty in the mundane sometimes spontaneously, sometimes intentionally. Spontaneously comes when, all of a sudden, I’m filled with happiness at the sight of simple or familiar things: the tidiness of a room at the end of a cleaning day, a bed well made, the sun filtering through the curtains in the morning, the songs of the birds, a beautiful music playing on the radio, etc. I don’t know exactly what triggers this, but when it comes, I welcome it!
And I find beauty in the mundane when I intentionally seeks it with a grateful heart. I like to do that especially when I feel sad or overwhelmed. I have found that when I intentionally look around me to try and find beauty, to rejoice in what God has given me, then I find the beauty secretly hidden in the mundane, in the smallest details. This exercise, if I can call it an exercise, always lifts my spirit and fills me with joy.

I always try to keep Michael Pollen's words in mind as I go by my daily tasks: "There is just wonder right in front of us, and we don’t spend enough time thinking about it.” We need to get our eyes up from our screens and look around at all the simple beauties around us.

I recently found real joy in washing and drying all my ratty potholders. Then had some left over fabric and recovered them. Beautiful, clean and free.

I love butterflies. I buy the ones from craft stores that have a clasp or wire attached to them. I stick them in my pot plants amongst the leaves or stick them on my windows I clip them onto wrapped presents or amongst a vase of flowers, they look so pretty clipped onto top of a lamp shade when the light shines through them. I’m just an old romantic. 😊

Finding beauty in the mundane: I absolutely loved doing my mother’s laundry when she was in a nursing home during COVID. She and I could only visit through the window from April through October of 2020, but she was allowed to place her red laundry bag in the entry way for me to pick up. Always she included a colored pencil page from her adult coloring book that she had done for me. They were usually idyllic scenes of comfy homes with teapots and little cats curled up on chairs. I loved having her clothing to take care of because it was about the only tangible thing that I could do for her. It was a sad day when I did her last load after she passed away from COVID on December 13, 2020. I also love doing my son’s laundry for him when he is home from college. 😊 Having laundry to do for others is truly a blessing.

i know you lost your father not to long ago a butterfly is a beautiful thing that comes to visit us
my daughter passed away @the age of 4 in 1986 to this day i still get visits from a white butterfly it makes me so happy enjoy it it is your father
