Dec.23 -- Union Square Cafe is the restaurant that led Danny Meyer to open a slew of hits including Gramercy Tavern, 11 Madison Park and Shake Shack. Meyer opened Union Square Cafe in 1985 and the restaurant thrived until a major rent increase forced him to relocate. Bloomberg Pursuits restaurant editor Kate Krader sat down with Danny Meyer at Union Square Cafe's new Manhattan location as he was putting on the finishing touches before opening night.
