Raviolo al' Uovo has always been one of my favorite pasta dishes but I rarely make it, but why not give it another go for the channel. Its not easy, but its also not hard, its just a ravioli filled with an egg yolk.

Super simple and a real hit if you love the taste of egg!

For those of us cursed with a wheat or gluten allergy - Chickpea flour works perfectly with this recipe at the same ratio, just don't skip adding some tapioca starch and xanthan gum that any chickpea pasta should have, otherwise the pasta is really susceptile to breaking and finnicky to work with if there are fillings involved.

Intriguing. But, when I never make these, I think I'll add spinach to the ricotta rather than parsley.

have you ever tried not drying the ricotta? Was it actually runny to an unenjoyable degree?
