Stuffed Artichokes with Whipped Feta

Skip the oil and try these air fried stuffed artichokes. This recipe melds classic mediterranean flavors for a lighter take on fried artichokes stuffed with a whipped feta cheese spread. They're bold, light, and crispy, air fried perfectly in LG's Slide in Induction Range w/ Air Fry.

Ingredients:
4 Ea Artichokes, stems trimmed to 1”
1 Cup Mixed Pitted Olives, Kalamata and Castelvitrano are a nice mix
3 Ea Lemons, cut into wedges
3 Tbsp Olive oil
To Taste Himalayan Salt, cracked
To Taste Black Pepper, fresh cracked

How To Air Fry Artichokes
1. Using a paring knife, trim the artichoke stems if necessary and peel around the outside of the stem to remove the hard woody exterior.
2. Slice your lemons into wedges and have them ready nearby.
3. Then, cut the artichokes in half and rub the inside of the artichokes with lemon thoroughly before placing them into a medium sized mixing bowl.
4. Using a spoon, remove the choke of the artichoke and discard.
5. Toss the artichokes in olive oil, then season with Kosher salt and fresh black pepper.
6. Transfer your artichokes to your air fry tray.
7. Drain mixed olives and add to the tray with your artichokes.
8. Place the ovens racks at positions 2 and 4. Place a half sheet tray lined with aluminum foil on the lower rack, to catch any dripping from the air fry tray above.
9. Place the artichokes and their air fry tray on rack 4, and turn the oven to Air Fry 425F.
10. Cook the artichokes for 15 minutes flip and continue cooking until they are roasted golden brown (about 30 minutes total, depending on your oven).
11. Remove the air fry tray from the oven and allow to cool for 5 minutes.

(Serve warm with whipped feta dip.)

Whipped Feta Cheese Dip

Ingredients:
¼ Cup Cream Cheese
½ Cup Whole Milk
1 Ea Roasted Red Bell Pepper, canned, seeds removed
1 Cup Feta Crumbles
1 Tsp Chopped Parsley
1 Ea Lemon Wedge, squeezed for juice
1 Tbsp Olive Oil

Recipe:
2.Pulse the mixture until a smooth paste is created.
3.Add in chopped parsley and a squeeze of lemon juice.
4.With the food processor running, slowly drizzle in olive oil to create an emulsion.
5.Taste to seasoning and store in an airtight storage container.
