Looks good! Will definitely give it a try.
Tip on the roux, seemed a little clumpy because you did not cook out the milk solids of the butter. Additionally, pour the milk in three reps and whisk vigorously before the next pour. Cheers!

You use feta for everything, and it's too tangy. It destroys the taste of some dishes.
