Boil rice and cook basturma and loukaniko in the oven.
While they cooked sauté cavolo nero until the edges start to crisp up and then add cherry tomatoes. When the tomatoes start to blister add chickpeas, salt and smoked paprika and cook for around 10 minutes. Turn the heat off squeeze the juice of 1 lemon over everything, give it a good stir and then plate up.

To plate up add your rice at the bottom so all the flavours and juices can drip onto it. Cut your loukaniko and bastourma into bite size pieces. The bastourma and loukaniko add heat, spice and smokiness. Top with your chickpeas, cherry tomatoes and cavolonero for bursts of earthy nuttiness, sweetness, bitterness and crunch 😋 😊
