Homemade mayonnaise in 60 seconds flat - and it never splits! RebeccaMumsnet shows us how, using just six store cupboard ingredients, a jug and a hand blender. Click 'show more' to see the recipe in full - we've kept it simple, but you could spruce it up with some lemon, herbs or an extra dollop of mustard.

INGREDIENTS
One egg yolk
1 tablespoon white wine vinegar
2 tablespoons water
Large pinch of salt
2 teaspoons dijon mustard
200ml vegetable oil

RECIPE
Bung all the ingredients into a tall container - vegetable oil last. Put the hand blender down to the base of the container and blitz. When the lowest level of mayo turns from yellow to white, move the hand blender up and down to incorporate the rest of the oil.

Less than a minute later and voila! Your sauce will have thickened and is ready to slop onto some sandwiches, or tuck into with some herby potato wedges.
