Not only did Wanda was able to break a small piece of thanos's sword but was able to rip apart a large chunk of thanos's armour which is also made out of uru which is kinda impressive, and just shows how powerful Wanda has been throughout the marvel series.

Fun fact: Storm Breaker isn't exactly stronger than the Infinity Stones, but it was rather designed to nullify their powers, which is why it was able to easily go through its blast at the end of Infinity War.

One thing i would like to add is .. thanos weapon was a strong uru made double blade sword...
But stormbreaker is made of uru and was made to kill thanos .. it overpowered all six infinity stones .. killed thanos ... and in thor 4 it's power was used to open the gates of eternity... it has magic in it hence wanda can't break it .( even if it is made from uru )
