@Little Cookie Co  thank you so kindly for taking time out of your busy cookie making to reply. I am going to purchase a dehydrator. Not the same one you have. Not the Cabella. That's a little big for my kitchen. We are looking at the "VivoHome" 400 watt 8 tier dehydrator - in red (matches my appliances). I have another question about drying times. For in between flooding to keep the sections separated and prevent it from all flooding together, you said an air dry time of 15 min/when it's crusty & shiny. I have also been drying my completed cookies for a full 24 hours before packaging. What would these times be in the dehydrator? 1) What amount of time for it to dry "between floods" in the dehydrator? & 2) What amount of time for the completed cookie to dry in the dehydrator before packaging?

Thank you for taking the time to explain this step by step. In all of the other pumpkin tutorials for royal icing people don't tell you to let that flooded middle section (& outlines) DRY FIRST, before proceeding to flood the two outer sections. They use time lapse & don't tell you that. I was trying with thin icing & thicken icing & could not figure out, why even though I was making a nice outline, they still ran together eventually making just one orange flooded cookie. (This is minus the face. I'm talking about just the pumpkin 3D effect itself.) So, im guessing there's a lot of wait for it to dry, with royal icing, in different phases of completing a cookie and even more depending on how complex it is. Most folks who put out tutorials don't tell you that & it's EXTREMELY important. Plus you have to make sure you have a lot of counter space available for these to hang around for hours to dry out.

I was wondering how you estimate how much of each icing colour and consistency you need? In the past I've gone with the Sweet Ambs method of just using one consistency, and no outline. I'm inspired by how versatile you make it seem, but I struggle to estimate colour quantity, let alone consistency!
