Saturated fat is used efficiently by muscles for fuel by a process called beta oxidation. Because of this, muscles will load up with saturated fatty acids and they will also downregulate synthesis of glucose burning enzymes, it is often referred to as "physiological" insulin resistance because the purpose is to maintain adequate blood sugar when carbohydrates are scarce. PUFAs are not used well as fuel by muscle cells. They also have double bonds that can carry oxygen radicals, and LDL cholesterol built on PUFAs is not easily removed from the bloodstream back into the liver.

The availability of PUFAs was fairly low before cereal grains became a staple, and animal fat was also higher in saturated fat and lower in PUFAs before they were force fed cereal grains instead of grass (for hindgut fermenters) and more nuts and roots for foregut fermenters.

So if you eat saturated fat regularly, your pancreas will need to release more insulin to manage a given amount of carbs, and this is the textbook definition of insulin resistance (insulin needed to manage x amount of carbs, or to maintain euglycemia in a fasted state. Problem with that definition is that saturated fat is replacing carbs as an energy source so of course if you cut your carbs in half, and increase saturated fat to replace it, you will need more insulin per gram of carbs ingested. It also tends to raise basal insulin levels, but it doesn't change total daily insulin requirements on a calorie per calorie basis. The main reason PUFAs don't do the same is because they are not preferentially moved to muscle cells for energy because they cause oxidative damage and are not burned as efficiently.

Rat studies have shown that when PUFAs exceed about 4% of daily calories, mortality starts to increase due to oxidative stress. There is no similar phenomenon with MUFAs or SFAs, probably since they are incapable of carrying radical oxygen species, and are less easily glycosylated as well.

At any rate, Seeds, grains, legumes, milk and eggs are the most common foods to elicit sensitivity reactions which raise cortisol by several mechanisms. I can't speak for everyone, but I have several family members who have tested positive for food sensitivities to corn, wheat, legumes, nuts and milk and the effects are substantial.

I don't promote low carb BTW. There are starches that I am not sensitive too that work great for me like potatoes and rice, but corn, wheat, oats, legumes cause respiratory issues including sleep apnea and chronic sinusitis

I feel like it's about context. In what context does pufa replacing sfa improve insulin sensitivity? A garbage diet? I eat over 30g a day of sfa and my insulin sensitivity is perfect.

I had some internet guy trying to tell me we needed sat fat for our brains. I asked him, "Data?" and I posted an MD neurologist explaining why sat fat is actually not needed in the diet for our brains. He came back with "It's high school biology, " or something like that. I thought to myself, yup, maybe he did take high school biology. I'm an experienced RN. So that was when I simply stepped away from the conversation.

Can you make a video on your opinion on eggs, milk and fermented dairy and their effect on blood lipids as there is decent amount of studies that show these foods dont have a negative effect on blood lipids and heart disease.

Hey, Nic! Do you think the insulin resistance resulting from saturated fat intake is a temporary adaptation or a pathological process? I think this is the real question at this point. It might only become pathological over time if combined with higher carb intake (as is the case with SAD). That might be the reason why both low carb and high carb diets can reverse diabetes.

I bet none of those studies looked at people on a zero carb high saturated fat carnivore diet. The other foods in those people's diets are confounding factors.

Hate to put any pressure on you, but, after your fat series, I'd be eternally grateful if you can help us, with 3 questions: 1) do MCT's (c:8 & 10) have similar results to longer chains, 2) an idea of the P:S Ratio, 3) Fasting releases mostly SF, right? Is that necessarily bad?
Right now I'm thinking there must be an offsetting mech.

I eat both fat types and I am still losing weight because I cut out bread/potato/rice/pasta consumption.
I feel like Saturated fat is good for my testosterone hormones and building muscles, I could be wrong but it just feels so..

But i just wonder, as saturated fat was the main fat consumed for thousands of years, isn't it a bit arrogant to say saturated fat = more insulin resistant = bad. Isn't the human body way more complex then that? It makes no sense to me that so many people did fine on it, and all of a sudden it is a problem now? Like how does that even make sense

Who's looking at organic meat saturated fat sources though? Is it the fat itself? Or is the fat toxic from what cows are fed- is their fat sick?

If I eat too much animal facts like butter I start to feel sluggish and low energy but eating lots of plant fats doesn't do that to me

also.. what is the classification of SCFA? I read sometimes that those are saturated fats, but all the research I have seen says they're good for your health.
