Wash the kidneys and then soak overnight in milk. Or buttermilk, ( or milk with vinegar). They are fabulous in a steak and kidney pie.

Ginger garlic paste, mint and a tomato enhances the taste and it really comes out very delicious.Pressure cook it for about 5 whistles with the same procedure adding a lil bit of water.
