I find they’re just quicker than a mandolin. I bought the Good Grips OXO one after several similar gadget failures. It works very well.

I usually peel carrots with the peeler and use it to make longitudinal slices which will be chopped with a chefs knife - i don’t own a mandolin and don’t plan on buying one soon but this works well for salads or garnish, a bit too thin for cooking purposes but depends jow wtin your peeler slices

The thing with doing it by hand or using the mandolin is, unless you're extremely skilled at doing it by hand, both produce too coarse of a julienne. Sure, skill issue on the one hand, but the attachments on these mandolins are primarily set up to produce a brunoise quickly, which just produces "too chunky" of a julienne (for use in salads or subs).
I didn't know these peelers existed until another YT channel introduced them as a tool to quickly produce a julienne for a weeknight meal for one or two people.
I picked one up, but was apprehensive, thinking it would produce a lot of waste, but that turned out ok. You simply don't "top" the carrot before processing it and that ends up being the bit you're left with after shredding it with the julienne peeler.
I really like it: easy, quick, just the right size and not a lot of wasted food. What's not to like?

Personally I like having the mandolin, I just have a basic one with only a single blade, it is easier to use it for even first cuts which in turn, with practice, helps make more even second/cross cuts.

Get a mandolin, don't go all the way and use the end bits for stock.

When working in food prep in kitchens I always ended up with the mandolin.
No idea if I give off mandolin vibes, but they scare the bejeezus out of me. Don’t get me wrong I got super fast at using one, put those first cuts of the day always had me imagining my knuckles mandolined. Still do and yet I’ve never cut myself on one. Go figure.
