Sumbul’s Strudel (Apple Strudel)

Let us welcome the fall season with an apple strudel. YUM! Strudels can be made in many different ways. My version is a lot different from other recipes out there but is equally delicious. Let us fill our kitchens with the sweet smell of cinnamon, apples, nuts, and honey.
Sumbul’s Strudel (Apple Strudel)
For the pastry dough:
-1 tsp dry yeast
- ½ cup warm milk
- A pinch of sugar
- 2 cups AP flour
- ¼ tsp of salt
- 5 tbsp softened butter
Dissolve yeast in warm milk and add a pinch of sugar to it. Leave for 5 minutes till it becomes foamy. Then add the yeast mixture to the flour along with a pinch of salt and knead. Add softened butter to it and knead till you have a soft and smooth dough. This dough is very easy to handle as it has butter. Transfer to a bowl, cover it, and let it rise till it doubles.
Meanwhile, assemble the filling.
For the filling:
- 2 large Granny Smith apples
- 2 large golden delicious apples
-⅓ c raisins
- 2 tbsp. Butter
-1/4 cup granulated sugar
- Lemon zest- ½ tsp
- Half lemon- juiced
- ½ tsp cinnamon powder
- ½ tsp cornstarch
- 2 tbsp bread crumbs
- ⅛ tsp all-spice powder
For layering in the dough:
- 3 tbsp softened butter- for spreading it on the dough
- 2 tbsp. Pumpkin seeds
- 2 tbsp dry coconut shreds
- 3 tbsp sugar
Toast coconut flakes and pumpkin seeds in a dry pan till fragrant and then coarse grind them. Add sugar to it and set it aside for sprinkling it between dough layers.
Peel and core the apples. Then cut it into thin wedges. Melt 2 tbsp butter in a pot and transfer apples and raisins to it. Sprinkle it with sugar, lemon zest, lemon juice, and cinnamon powder. Mix everything and cook for a few minutes till you see that the sugar is melted and the apples are well coated. It should take 3-4 minutes.
Don't cook it longer as apple’s juices with evaporate. Remove from heat add cornstarch to it and quickly toss it together. Transfer to a plate and let it cool completely.
Transfer the dough to your work surface and spread it into a rectangle. Spread the 3 tbsp soft butter on the entire surface of the dough leaving the edges clean. Sprinkle the coconut, pumpkin seeds, and sugar mixture on it, leaving half an inch border. Then fold the dough layers into thirds.
Heat oven to 380 F.
Now transfer the dough to a parchment paper as we will be filling and braiding on top of the parchment paper. Shape the layered dough gently into a long rectangle as shown in the video. Try not to rip the dough layers as it is very fragile dough.
Spread the apples filling in the center of the rectangle. Now cut diagonal slits on both sides of the dough, starting alongside the side of the filling. You can see it clearly in the video.
Start braiding the slits by overlapping them on top of each other and over the filling. Keep braiding till you reach the bottom of the strudel. Tuck the dough on the top and bottom end of the strudel and close the seams.
Brush the top with a warm honey glaze and sprinkle with poppy seeds. Transfer parchment paper to a baking tray and bake at 380 F for 22-24 minutes or till the top becomes a nice golden color.
Take it out and drizzle honey on it. Let it stand for 5-10 minutes before slicing. Enjoy!
