The History of Khao Soi (feat. Turm Robinson)

Khao soi is amazing and a huge part of that is that it's essentially a canonical fusion dish. It pulls influences from every culture that intersects with it and everywhere it goes, it transforms and becomes something new.

We spent a couple months digging into where it came from, where it's gone since, and what makes the dish so special. A few dozen batches later, we came up with our own recipe, and we call it Turm Robinson.

as a Pakistani based here in New York, I can say this such a fantastic rendition of the dish! Kha soi literally is a cult favorite in Pakistan, and with good reason. Its stupid good! btw huge fan! love what you guys do !

I made this for dinner tonight! Came out really yummy.

The soup was a touch sweet for my taste, so I added a tablespoon or so of rice wine vinegar to it, on top of serving it with a lime.
