Homemade Lasagna - Feeds a Large Group!

2 - (12 oz) boxes Oven Ready Lasagna Noodles
2 pounds ground beef
2 pounds sausage
1 large onion, diced
2 cloves garlic, minced
2 (15 oz) cans tomato sauce
6 oz can tomato paste
2 (14.5 oz) cans petite diced tomatoes
1 Tablespoon Italian seasoning
24 oz cottage cheese
1 cup Parmesan cheese, shredded
1 Tablespoon parsley flakes
3 eggs, beaten
3 (8 oz) package mozzarella cheese slices
shredded mozzarella cheese

Brown and crumble the ground beef and sausage. Drain well. Add onion, garlic, tomato sauce, tomato paste, diced tomatoes, and Italian seasoning. Simmer 20 to 30 minutes.

In a large bowl, stir together cottage cheese, Parmesan cheese, parsley flakes, and eggs. Set aside.

Spread a small amount of meat sauce in a sprayed lasagna pan (12” x 17” x 3”). Begin layering:
noodles
1/3 of the cottage cheese mixture
a layer of mozzarella slices, and
1/3 of the meat sauce.

Repeat layers two more times ending with the meat sauce. Top with a generous layer of shredded mozzarella cheese. Sprinkle a little more Parmesan cheese on top.

Bake at 350° for 45 minutes or cover tightly and freeze. If baking after being frozen, thaw completely before baking.

I love the way you think. You are not afraid to use ready-made items like minced garlic, or Parmesan cheese in the container. I know many cooks that are snobbish, lack of a better word, about their cooking. Cooking should be fun and easy and you make it fun and easy. Thank you so much to you and your beautiful wife who I have not seen yet. also I love the way that you include your wife and speak so kindly to her. It says a lot for you both.

Your recipe is very similar to mine....you convinced me to finally try putting the noodles in uncooked. My 80th birthday was in December and I never had the nerve to try it. I followed your recipe the way you did it and I have to tell you it was the best I have ever made. It got raves from my family as well. Thank you Tom and Melissa. I just love your show. Tom Melissa...first timers here we at this very moment are making this lasagna..it looks Soo good the 2nd time of my 54 yrs I'm doing so. I used large curd cottage you know our Kroger was out of ricotta but everything else is identical I've been following you guys 3 months now never commented yet ..and tomorrow pats peach cobbler here in Alabama we are using some fresh peaches from this years crop. You all are becoming my favorite cooking channel on YouTube your a great cook and Melissa does a wonderful job filming you. Have a blessed weekend from Morgan county Alabama!!!

TOM, I am full Italian. Parents came from Italy. Tomato paste is an American added to tomato sauce. In Italy, they do not use tomato paste.
Just to make you aware of it.
I do love watching your recipes. I’ve had tried a few of them they are delicious.
You are a very good cook

✍Hello Tom and Melissa...When I married my husband 62 years ago my mother-in-law taught me how to make Lasagna. She didn't use the sausage but she didn't skimp on the meat either. She also used the small curd cottage cheese mixed with the eggs and the Kraft Parmesan cheese together instead of Ricotta cheese. Back then they didn't have the "oven ready" lasagna noodles" so we had to boil them. Since she had the 3 boys plus dad she'd make this big dish or more of this lasagna recipe. She'd cook her sauce for several hours but these days I doctor up jarred pasta sauce plus have to cut the recipe down since it's just me and my oldest daughter since her dad passed away 21 years ago. Your recipe though is spot on from her recipe and as you can see by my name I married into a full blooded Italian family 🇮🇹 ha ha ha !! Melissa, Enjoy Tom's Lasagna at your Scrap Booking Party yummy !! It's only 20° here today where I live and it's January 5 th 2025 winter so Lasagna would be delicious on a day like today.

I come from an Italian family my mother taught me to make lasagne, we never used Cottage cheese though, always Ricotta cheese, we also used mild Italian sausage. And it taste great! But I like watching your videos, you give me good ideas!

I have been making lasagna without boiling the noodles for about 30 years. I don't buy oven ready because they cost more for the same as regular lasagna noodles. I love watching you cook and sharing all your recipes recipes ❤

I learned to make lasagna in high school home ec class. I’m pretty sure the recipe was from a Betty Crocker cookbook made in the 70s or 60s. I continued with that recipe for many years and it was always well received.

Thirty yrs. ago, they had a recipe on the back of the Prego jar for 'No-Boil Lasagna' and I've used it ever since. There's no difference except you have to keep it covered longer when you bake it. Thank you for your recipe, t really looks lovely! I'd love to come sit at y'all's table, but I live in SoCal.

I use an adaptation of my late husband's mother's recipe which she wrote for us on a card in a box of recipies that she gave us when we got married. One difference is the 10 ounces of thawed chopped spinach, squeezed as dry as possible, mixed into the ricotta, or cottage cheese instead of the parsley you used. This was one of my late husband's favorites and became one of mine as well, my my second husband loves it too so I still make it occasionally, in fact I should make it again, thanks for reminding me 🙂
