That's a great overview!
You touched on the difficult aspect of manuscripts needing a person to interpret them to notate the music. I'd add that any Urtext editor and publisher worth their name will remark any interpretative challenges and changes they had to apply to their edition, either on the face of the score or in the editorial commentary which accompanies the edition.

On Bärenreiter it's worth adding that while their house style is a deep blue cover, the major composers are colour coded for easy identification and spotting on the shelves, thus Bach is a mid blue, Mozart is a bright red, Schubert is yellow, Händel is a darker red, etc. Those collecting Bärenreiter colour coded editions can spot their composer from a mile away just by the colour of the cover and spine of the score book.
