Halloween food for thought…

Zombie Brains Spaghetti Casserole -
Ingredients:
1/2 cup shredded mozzarella
2 eggs, beaten
24 oz marinara
12 oz spaghetti noodles, cooked soft
Nonstick cooking spray, for the mold
1/2 cup Italian breadcrumbs
2 teaspoons olive oil

Instructions:
Preheat oven to 400 degrees F
Stir together mozzarella, eggs and 1 cup marinara
Add mixture to noodles and toss to coat
Spray 2 brain molds with nonstick spray (I made my molds in large ramekins with a thick strip of foil running through the middle to separate my brain hemispheres)
Press noodles into the molds
Mix together breadcrumbs and olive oil
Sprinkle over noodles and press gently
Bake 35-45 minutes until breadcrumbs are golden brown and noodles have set
Cool in molds for 30 minutes
Invert onto plate and drizzle remaining sauce down the center of the brain
