Have one purchased in the the early 90’s made of Carbon V! Impressive slab of steel!!

Pause the video at the end, that's the thinnest heel material. Also in the past strong men have baked items to remove all the moisture and make them weaker and easily ripped apart.
*I don't know if that's the case here but the shoe heel material is visibly thin.
That all said, it's still pretty impressive. The knife would have to be sharp and heavy and the strike strong.
