Bok choy grows as an annual in every hardiness zone in the U.S. It does best in cooler weather; Dry and hot conditions can cause bok choy to bolt prematurely. This vegetable is not as winter hardy as smaller leaved Asian greens, but it may be winter-hardy under cover in USDA Hardiness Zones 4 to 7 when there are mild winters.

Bolting" refers to a plant putting forth a long stalk bearing flowers, which can change the taste of the plant and slow its growth. Green, leafy vegetables in particular tend to bolt in response to environmental changes, and they must be eaten as soon as they begin to bolt. Bok choy's leaves will turn bitter once the plant bolts.

Here in SW Oregon our spring weather can be frozen at night and hit the 80s in May. I love bokchoi so I might have to give it a try.

Thanx for mentioning the watering. My pak choi just started bolting and we’re in early spring. But I did miss a couple days watering and saw they’d wilted a bit.

I grew these as seedlings in my greenhouse. Planted them in the garden covered with cloth. Yes I see the weather here was hot and dry. Okay I’ll grow in early spring next year.

I eat the bolted ones (all mine bolted 😂😂😂) but it was still good! I boiled it and followed maangchi's recipe

If you harvest a few outer leaves at a time (like lettuce) on a regular basis, or cutting off the crown (like celery), will you prolong the bok choy from bolting and get to harvest several more times?

I noticed that you said the plant sends it’s energy to the flowers when it bolts. My question is what will happen if one removes those incoming flowers? Will it put the energy back into the leaves?

Are Bok Choy Flowers Edible?
Bok choy flowers (and buds) are perfectly edible. The flower stalk itself may be too tough and fibrous, but the bright yellow flowers are tender and have a strong flavour.

Bok choy is edible and safe to eat after it flowers, but the leaves will get increasingly more bitter and tough as it matures, making it less appealing for the kitchen. The sooner you harvest your bok choy after it starts bolting, the less bitter it will taste.

You can cut the flower to force it to continue to grow.

Mine just bolted, but I cut them right off at the bottom of the stem, it’s getting very hot now…I wonder if it will still grow more leaf or just keep going to flower ?

I've just set seed today. I've tried in past years, but the bolt in high temperature. So I'm trying a little later...

Mine is in the shade and nights have been around 48 to 50 and mine are bolting they aren't even 6 inches . Pissing me off . I love bok choy.

Thanks for the video! My Bok Choy has holes on them. I had sprayed neem oil but it didn’t seem to help. I’m sad cos they can’t be eaten. Is there anything I can do?

No wonder my beautiful bok Choy has a bunch of flowers instead of more bushy green yumminess!!! It’s been in the steamy 90’s-100 degrees where I live 🤦‍♀️

I suggest, you may want to do research on the flower. You could possibly have a new market in your hands. As an up and coming herbalist, I steep the flower in tea, wonderful benefits. To think of the leaves are that beneficial, I can only imagine the healing properties in the flower using the right methods
