I just finished watching Shrek 2 after last watching it many years ago. All the adult jokes went over my head back then, but now they made me crack up! By the way, you forgot that moment at the start of Shrek 2 where Shrek is telling Donkey that he and Fiona need their 'alone time', and Donkey keeps nodding with a stupid grin on his face.

You missed the scene where Shrek has a nightmare about being a father. When he’s on stage, the banner says “Class of MCDIX”, but Shrek’s head covers the “cl” in “class”. MCDIX is the Roman numeral for 1704

What about the Forever After scene where, as Donkey and Shrek are looking for Fionna, Donkey smells the waffle trap.
He says, "I smell something, what ever it is is sweet!"
Shrek: "Fionna-"
Donkey: "And tasty~"
Shrek: "Hey, that's my wife you're talking about!"

Honestly, as much as I love this movie. The humans, with some exceptions like Fiona, are just barely hanging on the slope to becoming super uncanny valley.
It's pretty uncomfortable to look at though honestly, and if all, is super perfect for cementing how satirical Shrek is also to Disney's appealing human designs.
