hi Barista here,
so after you steam milk (in a metal pitcher definitely not tapping glass against the counter) it settles the micro bubbles in the milk so you get a super smooth paint like texture to your milk so you can pour beautiful latte art.

To answer Karmas question,
no i don’t particularly like eating dog poo. hope that helps
