Hey Guys!

I have taken a quick break from season 4 recipe videos to bring you this recipe I came up with using @tidefordorganics new Sun-dried Pesto. They are a great 100% vegan, gluten free & organic company. So I was honoured when they asked me to come up with a recipe using their new pesto. It worked so well with this recipe, really bold flavours. I love charred Aubergine/Eggplant & stuffing them with this amazing filling was a winner!

Just made this! Amazing! Really easy and fast, not many or complicated ingredients! Still it taste exquisite!
My eggplants where a bit bigger so next time I will keep them in the oven a bit longer. Family loved this, even my 12 year old who still hates my new Vegan cooking found it delicious!

I love you so much !♡ it's so beautiful to see vegan cooking brought to another level. People really think that vegans can't eat good or can't have flavor in their food. Just made these. I'm not a fan of capers so I used green olives instead and I also added a bit of chermoula (only discovered it in the supermarket today). They taste great! Thanks, Gaz! 😄

Holy cow, it's one upload after another! I love eggplant, and haven't had one yet this summer, so this is a sign to pick some up at the farmers market and get to all the eggplant recipes I've yet to try. This one really looks spectacular! TFP : )

OMG where do I start, I used this recipe this evening to make this amazing looking meal and it was absolutely delicious! Thank you so much for sharing this - who knew aubergines could taste this good!
I did make my own pesto from scratch and use spelt grains instead of Quinoa which I did not have in the kitchen and mushrooms in place of courgettes but never the less turned out fab and my husband loved it! :) Many thanks! Definitely will be using this as a staple dish for something hearty since turning vegan this is now my fave dish!
