This is by far our favorite recipe for trout! It also works well for other fish too.
1 cup brown sugar
1/4 cup salt
Mix and put on the trout. Let them sit in the refrigerator for 12-48 hours.
Dry the fish of and place in the smoker for 2-3 hours at 165 degrees. (Cook time will depend on thickness of the fish)
