In Mexico we take pride on presentation; first it needs to catch the eye and the rest is history. This soup catches the eye and meets every expectation as far as flavor, it's a JOY to make! ➤ Dried peppers

➤ Sauce
1/2 medium white onion
6 ea garlic cloves, peeled
1 red bell pepper
14 oz roma tomatoes (about 4 ea)
➤ Spices
➤ Liquids
2 cups water

➤ Veggies
3 TBSP avocado oil
12 oz green beans
1 Mexican squash “Calabazita”
1 chayote
2 corn on the cob

➤ Herbs
1/2 bunch cilantro
4 sprigs mint or hierba buena
4 sprigs epazote leaves

➤ Fish
3 lbs whole medium catfish, skinless (5 pieces)

9 cups water

Amazing recipe! I love how fresh and healthy Mexican food actually is. It's so different than what we see in most of the restaurants in the states, which tends to be a lot of just meat, cheese, and some type of tortilla.
