Continuing other people's comments, the pumpkins at the entrance say WANDER with a white stem, ROAM with a black stem.
The rest of the level is full of pumpkins with colored stems.
So each colored stem uses a specific cipher system.
The ciphers you know from the entrance are:
White stems use the WANDERLUST cipher.
Black stems use the THEROAMING cipher.

Pretty sure each color represents a different 10 letter code this is why you are getting 5 different letters per number (the colors i have seen in the vidoe are blue, red, yellow, white, black, dark green, green and purple so i am guessing there are 8 or more diffrent letters per number)

It's actually 100x harder to solve without using the color, considering you end up with a word jumbler of 8 letters instead of 1. Big brain power.
My guess, I'm like 99% sure about this:


The pumpkin stem tells you what word it is. So for example the words with the white stem follow 'WANDERLUST' while the black all follow 'THEROAMING'. All the other color of stems have their own words. The pillars around the room with the colors give you hints about what words those would be/what the letters are. You can certainly get a lot of them from insert.
