Let’s make some inari for yet another road trip. This time it’s with the extended family and I’m especially excited because my cousin from New York is coming just for this. We’re going to go apple picking which kind of seems like an excuse to see each other and eat. We will be doing packed lunches on the road and meet at the orchard. We have planned to coordinate outfits (kind of) to get a family picture in so let’s see how that goes!

Inarizushi
Ingredients:
36 Inari
6 Cups rice (wash and cook this)
8 Tbsp rice vinegar
4 Tbsp sugar
2 tsp kosher salt
1 piece of kelp
2 Tbsp toasted sesame seeds

Directions:
1. First, wash 5 Cups rice thoroughly.
2. Then, quickly wipe kelp with a paper towel in case there are dirt particles. Place on top of the rice and cook it in the rice cooker.
3. In a bowl, combine 8 Tbsp rice vinegar, 4 Tbsp sugar, and 2 tsp kosher salt. Microwave it for 30 seconds or until granules are dissolved.
4. Once rice is done cooking, remove kelp and place rice in a big bowl.
5. While the rice is still hot, gradually drizzle in parts, the sushi vinegar over the rice while gently mixing and breaking up the big chunks of rice. Fanning the rice will help cool down and remove excess moisture.
6. Once slightly cooled, add toasted sesame seeds to this and mix gently once more.
7. Gently form sushi rice into an oblong shape similar to the inari so you have 24 pieces.
8. Gently squeeze out the juice from the inari and open up the pockets to add rice.
9. Then, make the inari by opening up the pockets and adding the rice in it.
10. Enjoy!
