Dads Oatmeal Mistake cookies

This recipe was originally a Coconut Oatmeal cookie; however, when Ace made them the first time he thought it was Oatmeal Raisin so these cookies were created. A recipe given to us by a dear older couple

Cookies, Dad’s Mistake
(Oatmeal Raisin)

Ingredients

1 cup margarine, room temperature
½ cup sugar, brown
1 cup sugar, white

In a bowl cream the above ingredients until smooth. Add in and stir:

1 egg, beaten 1 tsp pure vanilla

When this is combined, cover and set aside to prepare dry ingredients

In another bowl blend and stir

1 ½ cups flour 1 ½ cups rolled oats
1 tsp baking soda 1 tsp baking powder
1/8 tsp salt 1 cup coconut
1 cup raisins

Mix all dry ingredients into the wet ingredients until well blended.

Bake in 350 degree oven for 8 – 10 minutes.
