1 pound (about 3 medium) yellow onions, thinly sliced
2 garlic cloves, minced
1 1/3 pounds (about 6 medium) Hungarian sweet peppers or yellow bell peppers, thinly sliced
Kosher salt and freshly ground black pepper
2 teaspoons sweet paprika
1 (28-ounce) can whole peeled tomatoes

I had this 2 days ago. Love it. Great simple recipe, like this young lady described. But, I add smoked sausage. You can omit if you're a vegetarian.

Very good I usually add 1 or 2 eggs at the end and cook for two minutes while stirring then turn heat off. Sometimes I add bacon too but great job!!

We don't crush the tomatoes, and we don't cook the peppers. We start by frying a large amount of bacon in its fat (we don't use oil), and the fried bacon (roast) is thrown out, we fry the onion in the fat released from the bacon (you can sprinkle flour on it for the sake of crusting), then we put the sliced or quartered tomatoes on it, then the paprika.

What constitutes as a neutral oil? Would extra virgin Olive oil work?

Yup and you can also add some sausages or chicken to that ratatouille. Or hotdog sausages or rice... Feel free to modify the basic recipe to your heart's delight.

I like to use red onions and multiple coloured peppers.
My farts are always peppery afterwards. The taste is worth it for me but not to my surroundings.
