Farinata is a chickpea flatbread recipe known as “socca” in the southeastern part of France and “fainè” in Sardinia.

Farinata is an easy recipe that involves mixing chickpea flour and extra virgin olive oil and baking it in the oven for about 20 minutes.

⭐️ Ingredients
1 cup (130 grams) chickpea flour or garbanzo bean flour
1½ cups (360 grams) water
1 teaspoon salt
2 twists black pepper
3 tablespoons (40 grams) extra virgin olive oil

Instructions
Preheat oven to 480°F or 250°C. Add chickpea flour, salt, and water to a bowl and blend with an immersion blender for 3 minutes till completely smooth.
You can also use a regular blender.

With a spoon, remove some of the foam from the top of the chickpea batter.
Add olive oil to the baking sheet.
You could use baking paper instead of oil on the baking sheet, but in that case, you'd have to add the oil to the batter.
Gently pour the chickpea batter into the center of the tray, but first over a spoon and do not pour directly into the pan.

Bake at 480°F (250°C) for 10 minutes, then set your oven to broiler and broil the farinata for another 8-10 minutes.
It should be well cooked, golden and crispy on top, and soft and smooth on the bottom.

Remove from oven, cut it, sprinkle it with salt and freshly ground black pepper, and serve.
Farinata is best eaten hot, right out of the oven.

Oh my goodness! I have just made this. It is so delicious and quick to make. I served it with vegan feta, pickled roasted cherry tomatoes and arugula.

Looks good. How about if you add finely chopped garlic, onions, cilantro and a few tomato slices?? Maybe a pinch of black salt will give that egg flavour and taste like baked eggs 😊

We make something similar in India called cheela with chickpea flour. Just mix some with water, and add vegetables and spices of choice like sliced onions, bell pepper, cumin seeds, caraway seeds (a pinch only), salt, garlic crushed or powdered, green chillies etc. all into the batter.

And then just lightly coat a non stick pan with oil or ghee and pour the batter on top, spread evenly, cover and cook both sides on low flame for a few minutes till it's done.

So it's like a nutritious savoury pancake.
Serve with yogurt or any chutney if you like but it tastes great on it's own.

And the options for add ins are endless. You can really experiment with different flavours.

You can even change the flour base and use a mix of different flours. My favourite is chickpea flour and rice flour together.

You can add cilantro or spinach too. Grated carrots, potato, sweet potato or squash. Sometimes we add leftover daal. It tastes amazing. 🎉

It doesn't t look like any farinata. 😢 less water and the dough must be in an already hot pan with lot ov hot olive oil
