Anna is here today to show you how to make a delicious vegetarian Greek Grilled Eggplant!

1 medium eggplant, cut lengthwise
Kosher salt
2 tbsp extra-virgin olive oil
for garnish: balsamic glaze, crumbled feta, red pepper flakes

1. Preheat grill to 375 F. On a parchment-lined baking sheet, place eggplant cut-side up and sprinkle with
salt. Let sit for 30 minutes.
2. Pat eggplant dry then brush with oil. Place cut-side down on grill and grill 4 to 5 minutes, flip then grill
another 2 minutes. Remove from heat, garnish, and serve.
