Ingredients:
Remoulade sauce
3 tablespoons mayo
1/2 tablespoon spicy mustard
1/2 teaspoon Worcestershire
1 tablespoon gherkins, chopped
1/2 tablespoon green onion, chopped
1/2 tablespoon dill, chopped
1/2 tablespoon parsley, chopped
1 squeeze lemon juice
1 scrunch pepper
1 kosher salt
Chicken Sandwich
1 chicken breast, butterflied
2 strips double smoked bacon
1 heirloom tomato, sliced
2 slices Swiss cheese
1/2 avocado, sliced
3 leaves leaf lettuce
2 tablespoons sauce remoulade
1 splash EVOO
1 kosher salt
3 twists black pepper
1 brioche bun
Method:
For the Remoulade Sauce:
1. Mix all of the ingredients together to combine and reserve for use.
For the Chicken Sandwich:
1. Crank up your Napoleon Freestyle up to 500F and sear off your bacon.
2. Season your breast with EVOO, salt and pepper. Toss onto the non-stick wave grids.
3. Once the bacon is crispy on both sides remove and toast your bun in extra bacon fat.
4. Flip breast, top with cheese and grill to an internal temperature of 160F.
5. Build your sandwich with remoulade, grilled chicken, avocado, seasoned tomato and lettuce. Carve and enjoy
