Nice one... just trying your Sicilian Sardine Spaghetti this evening from the Save with Jamie book, was daunted by the prospect when I bought my sardines yesterday but this makes it look easy, thanks! Looking forward to preparing and eating it now.

I had to filet these in school where we kept both fillets attached, we did what Chef does in this video but went from the belly and once we started to separate the spine from the fillet we could just pull the bone off the other one essentially leaving us with a boneless dressed sardine. It was really cool. I've started buying my fish whole and doing it myself for practice, plus it saves me money.

Just like a mackerel only smaller. A great fish. Though my fish guy at the supermarket will do the work for me, always befriend your fish guy.

There is still some bones are they ok to eat because some fish have small soft bones that u can chew and eat with the meat

I absolutely LOVE sardines, but even after they are filleted, they are still full of bones. I've tried everything, even pin boning them, but I cant get the really fines ones out.

Be careful not only with the force used on your knife, but also your hands, since it has a very delicate flesh and will break easy. (That's why I always do my sardines on a charcoal fire since you dont even have to gut them, perfect everytime when good quality)
