Better than Costco Quinoa Salad- Use as a Main dish

3 cups cooked and cooled organic tri-color quinoa ( I bought it at Costco)
2 cups chopped organic kale
2 cups romaine lettuce
1 cubed cucumber
1 de-seeded and cut bell pepper (any color)
1 cup of small cut cauliflower florets
1/4 cup hemp hearts
1/4 cup chopped coriander

Directions:

Cook your quinoa on the stovetop. I will have a separate video on how to cook perfect quinoa for salads linked here. While quinoa is cooking, chop your veggies and add them to a large mixing bowl.

Start by massaging the kale with a teaspoon of lemon/lime juice for 2-3 mins. The point of massage is to infuse the kale with lemon juice and also to break down some of the tough, fibrous characteristics of kale. This makes it easier to chew and digest, and makes for a more tender salad. Chop your veggies and add them to a large mixing bowl and add Quinoa once it is cool.

* Add your Vinaigrette dressing and serve immediately or you can easily store it for the next day. In fact, it tastes even better the next day as all the flavors have had time to meld together.

Let me start by saying that as a nutritionist I love Quinoa!. So when you want a healthy salad that is filling enough to be the main dish, then you need this Quinoa Salad recipe. Cooked quinoa gets combined with chopped veggies and a delicious lemon dressing. Skip the store-bought version and make it at home instead!

If you’ve never had the Costco Quinoa Salad, then you are missing out! But, that’s okay because I’ve re-created it for you today. The salad has a delicious mixture of brown rice, quinoa plus lots of chopped veggies like cucumber, bell pepper, kale, romaine lettuce, and cauliflower.

The seasonings and dressing for this vegan salad are really simple. Everything gets tossed together and tastes just like the store-bought version. The benefit is that you get to control the quality of the ingredients and you don’t have to make a trip to the store.

Let me show you how easy it is to make this copycat version of the beloved Costco Quinoa Salad with a super-easy lemon and olive oil dressing.

P.S. Quinoa (pronounced “keen-wah”) is a type of edible seed that comes in various colors including black, red, yellow, and white. The plant has been cultivated for about 5000 years and is indigenous to the Andean region of South America, specifically Bolivia, Ecuador, Chile, and Peru. Quinoa often called a “superfood” or a “super grain,” is one of the world’s most popular health foods. It is an excellent source of protein (a complete source, as it contains all the nine essential amino acids). It also contains a good amount of fiber and minerals. When you have a meal containing Quinoa you also get Manganese, Phosphorus, Magnesium, Folate, and Thiamin(Vitamin B1) in your meal.

P.S. If you are in a time crunch when making dinner then you can put the cooked quinoa in the freezer for 15 mins so it cools down faster. You can have this dinner on the table within 30 mins!
