Birria Ramen Recipe:

Meat:
4 lbs chuck roast
1/2 onion
4 garlic cloves
2 bayleaves
7 guajillo peppers
3 pasilla ancho peppers
6 chiles de arbol

1 roasted tomato
1/4 tsp cumin
1/4 tsp peppercorns
2 whole cloves
1/2 stick cinnamon
1 tbsp chicken bouillon
Salt to taste
2 cups water you cooked chiles in

Instructions:
Cover your meat with water, add onion garlic and bayleaves. Once meat reaches a boil; clean your broth and add your dried chiles to your pot.
Now blend together your softened peppers, onion, garlic cloves and bay leaves that you previously boiled, roasted tomato, spices, 1 tbsp chicken bouillon + salt to taste with 2 cups of water you cooked chiles in. Strain the sauce you blended and add it to your pot after that first boil and then cover on medium high heat for 2 hours or until your meat is fork tender.

Now boil your ramen noodles (follow instructions in the back of your noodle packet). My noodles cook in 4 minutes! Add noodles to a bowl, add lots of broth, some shredded birria meat and top with cilantro, onion and spicy salsa!

A squeeze of lime over the top at the end is the only thing I would do different. Looked amazing!

Great job! You should try to sear the outside of the meat prior to boiling one time you make it, adds a depth of flavor!
