Use a spoon, not a fork to eat them. Take a small bite and slurp up the soup (broth) inside the dumplings. There’s layers to it. Also, try the pork ones if you eat pork. Much more flavorful than the chicken ones IMO

Its acid that theyre missing. Dumplings are usually served with a mixture of vinegar (lime or lemon works too) + soy sauce

You should try them again but this time line your steamer with parchment paper so you can get them out with the soup still in the dumplings.

they usually have vinegar added to a dipping sauce. Chinese black vinegar is the best, but there are substitutes
