Vietnamese Fried Bananas Recipe - HoneysuckleCatering

Ingredients:

4-5 cups Vegetable Oil for deep frying
1/2 cup water
1 tsp sugar
1 pinch of salt
3 tbsp coconut milk
4-5 Manzano or baby bananas (plantains ok - not as sweet)
1 cup tempura batter (Bot Chien Tom - found in asian market)

dipping sauce:

1 tbsp sugar
1/4 cup coconut milk
sesame seeds

Directions:

Mix batter with water, sugar, salt, and coconut milk thoroughly. Add water as needed. Take a sheet of wax paper. Peel and cut bananas in half. Smash each half, one at a time inside the wax paper, folded over on itself. Dip the smashed banana halves in the batter, coating on each side.
In a medium saucepan heat vegetable oil until hot. Test by taking a skewer or chopstick and touching the bottom of the pot. If it starts to bubble, it is ready (350-375 degrees F). Cook bananas in oil, flipping on each side until golden brown (2 minutes or less each side). Remove and drain on paper towel.
To make the sauce, take 1 tbsp sugar and mix with 1/4 cup coconut milk. Heat in microwave for 30 seconds. Add a sprinkle of sesame seeds (optional).
Dip fried bananas into sauce and enjoy!

thank you so much! you can use just ripe bananas! i sometimes don't like using really ripe bananas because they become too mushy during the cooking process. but they carry more flavor, so it's definitely a trade off!

Tried this tonight for the gals in my book study. It was delicious! ( My friend Crista was the banana smoosher!) The ladies LOVED them; and living in the deep south, that is saying alot! (most don't like anything too out of the ordinary.) Thank you for sharing!

all I do to make this snack is mix water and cornstarch together then dip the bananas in. Um so GOOD!! I love how you made yours though!!

There is a vietnamese bread and pastry shop here in Biloxi called Le Bakery. They make an AMAZING coconut yucca pie that is my favorite thing that they serve. (Along with an iced cafe sua da!). Would you consider posting a tutorial on making them? (have no clue what the Vietnamese name is for them.) Thank you, and have a nice day! :)
