Ingredients
- 1 head of cauliflower, cut into florets
- 1 red onion, sliced 1 cm (0.4 inches) thick
- 2 tbsp (30 ml) olive oil
- salt and pepper, to taste
- 1 tsp cumin
- 1 tsp ground coriander
- 1 tin chickpeas, drained and rinsed
- 1 tsp sumac
- 100g (3.5 oz) hazelnuts
- 300g (10.6 oz) baby spinach
- 1 tbsp (15 ml) balsamic vinegar

Method
1. Preheat the oven to 220°C (430°F).
2. Place the cauliflower and onion on a roasting tray, drizzle with oil, and season with salt, pepper, cumin, and coriander.
3. Roast in the oven for 25-30 minutes or until golden brown and just cooked.
4. While that is roasting, add the chickpeas and hazelnuts to a bowl, drizzle with oil, then season with salt, pepper, and sumac.
5. Place them into the tray in the oven with the cauliflower for the last 10 minutes.
6. In a large bowl, add the spinach and the contents from the oven while they're still hot, dress with balsamic vinegar and toss. The heat from the cauliflower will wilt the spinach a little (note: if you’re not planning to eat the salad right away, let the tray from the oven cool completely before you mix it with the spinach).
7. Enjoy!

I love roasted cauliflower with sundried tomatoes, garlic, walnuts, and some fresh basil. Might add some cheeky aubergines every now and again 👌🏻

Roasted cauliflower is one of my favorites.. I like to make soup with it too. That was usually my go to vegan soup in winter time for smaller events.

Excellent Andy. I'm going to make this 2nite. Time to cut back on our meat consumption not to mention cost! Looks sooo simple even I can do this. Chickpeas are very underrated!

I just made it, and it was delish. I was initially concerned that the chickpeas would be too wet, even after rinsing and then drying them off a bit by putting a couple paper towels in the bowl too, but it was perfect - the hazelnuts had some slight crunch, but the chickpeas were lovely and smooth. The whole thing was delicious, and was a great way to get veggies. Perfect warm salad :)

Salads are ALWAYS DELICIOUS and can be made with so many different flavors or ingredients. This one looks certainly worth trying Andy. Thank you for sharing😂❤❤

My grandma always made a raw cauliflower salad on Sundays. It's grated, then you add water, vinegar, salt, pepper, a little bit of sugar, a good amount of remoulade, and a certain salad seasoning.
It's one of the best tasting things I've ever had but it's so hard to replicate since the ratios of it are very crucial.

I'm getting better at it tho and once I nail it again I just have to write it down properly lol
