Did you purposely skip the details of the derivation from the 6:00 mark to the 7:10 mark? I was expecting to see the Law of Cosines applied to the chord delta r, then a half-angle trig identity used to get to sin(theta/2)/(theta/2). The limit of this ratio as (theta/2) approaches 0 is 1. (Can go through the “squeeze theorem” to convince the students of this limit.) Only then does the average acceleration become v^2 / r.
