Have you tried lossless and/or intra-only h.264 as an alternative to Ut?
It'd probabbly be a bit slower to transcode but could result in much smaller file sizes. Not sure whether Nvidia fixed lossless h264_nvenc yet but, with a decent processor, x264 should fine for recording too nowadays.

LL h.264 might be a superior format for export to YT regardless of what you use for recording or editing though becuase those processing times sound insane to me for the length of video you usually produce and, if it produces smaller files, that would speed up the upload too.

12:17 If it's just 1Gbit/s, even a decent HDD should be able to handle that as sequential write speeds of >150MB/s aren't uncommon. Bitrate spikes would be more of a problem but I guess you could also do striped RAID to speed it up to over double that in sequential.
Would be a lot cheaper than SSDs, especially given the large storage requirements for lossless ;)
