I've done this technique on 3 huge walls now and I can confirm that the best strategy is to take the tape off immediately after you lay the joint compound. The compound is viscous enough that it will hold its shape even completely wet. I've actually never seen anyone try to take it off dry, but good to know it's not completely ruined if that happens!
